While one cannot deny that the supreme baking environment for robust artisan bread is a wood fired oven, this is of course, not always possible. Liezie and I have been baking bread in our home oven for many years with much success, which inspired me to share my knowledge with those of you who are eager to learn the techniques needed to successfully create île de païn style artisan bread at home too.
We offer a set with 2 DVD's available to assist you in your bread quest. In the first DVD, named simply - ‘bread’ - I share the time-honoured art of making a classic artisan loaf, which is a classic wheat bread. Using the same dough, I also explain how you can make four variations. By shaping it differently, and adding some ingredients to the basic dough, very different, distinctive shapes and textures can be achieved. The DVD also offers viewers a brief glimpse into a day in the life of île de païn. This set also includes a recipe booklet with detailed instructions.
The second is a 2 disc Blue Ray set – ‘baguettes and ciabattas’ - which focuses on these two specific loaves in detail. Techniques and principles are shared to equip the food professional and baking enthusiast with the skills to bake these two classic wheat breads at home or in a professional environment. All recipes and time lines appear on the screen for complete instruction.
